my wife and i go through about a pound of ginger a week between the two of us, and i agree. the tender young ginger, while not as strong, is much easier to deal with. for reasons that ginger boosts our immune systems, we are drinking around a liter and a half of hot ginger tea a week. ginger also has a bit of an an antibiotic effect, and is great for sore throats and colds. not only that, but the tea can also have a relatively strong aphrodisiac effect on women, so be careful.

i also add some thinly sliced ginger to cooked greens, and to pork and poultry dishes.]]></description>
